I've always loved guacamole, but I never realized how delicious an avocado could be on its own until I cut out processed and refined foods. My tastebuds have since been revitalized and reawakened and I continue to discover simple, delicious pairings with few ingredients. With my hectic schedule, there are days I don't get to eat lunch! I crave healthy fats to feel full and balanced so I turn to avocados for monounsaturated fats that taste really, really ridiculously good. Pair that with my favorite flavor - citrus - for a fabulous mini-meal comprised of two superfoods. Avocado has more potassium than a banana with much less sugar, among many other health benefits. Try this simple 3 ingredient recipe, ready to serve in less than 5 minutes when entertaining for Sunday football or anytime you want a satisfying snack. #feelingsnacky

Fresh From the Market:
- 1 Ripe Avocado
- 1/2 Lime
From the Pantry:
- Gluten Free Chips (Sea Salt Pop Corners)
From the Spice Rack:
- 1/2 tsp. Sea Salt
- Potato Masher or Mortar and Pestle
- Citrus Press
- Slice and scoop out the middle of the avocado.
- Squeeze the juice of 1/2 a lime over the avocado. I am obsessed with my citrus press!
- Add a pinch of sea salt (1/4 tsp.)
- Mash and mix it all together until it is creamy.
Serve with gluten free chips when you are craving something crunchy and salty. My chips of choice are Sea Salt Popcorners. They fall within my '5 ingredients or less' rule of thumb when choosing a packaged or processed food. The sea salt flavor of Popcorners only has 3 ingredients - yellow corn, sunflower oil and sea salt!
Enjoy this simple yet delicious treat as a snack for two, whip up several servings for a party or devour the whole serving as a light lunch or dinner. Just be sure to balance your fat intake (i.e. if you eat this in one sitting, don't pair it with a steak, please).
